Becada con setas y foie
Nos vamos al restaurante 'El Borbollón' (Recoletos, 7) donde preparan todo tipo de aves de caza: pintada, perdiz roja, pichón o la menos conocida becada. Es precisamente esta 'rara avis' -nunca mejor dicho- la cocinan con setas, foie y salsa de oporto, calvados y nata.
